Loaded Chicken Ramen

Ramen has recently been a craze and has caught up a lot in the list of exotic dishes. Most of us might have seen Ramen being consumed in Japanese Anime movies / tv shows during our childhood days and its popularity has not spread globally. Fairly simple to make and loaded with healthy toppings, apart from being a treat to the eyes, it also adds excitement and health to your meal.

There are 3 main components to the Ramen, 2 of which are crucial for getting it right. The first is getting that broth right and full of flavor. It should be loaded with flavor, yet light on the stomach. It should not have any heaviness from the spices. Secondly, is getting the noodles cooked perfectly. Make sure you do not boil the noodles in the broth or leave it in the boiling water / sauce for too long, as it will then become soggy and sticky. Ramen noodles should have a very slight firmness to it and not just melt.

What makes the Ramen exciting is the plethora of toppings to choose from. You can grab any number or any variety of fresh or cooked ingredients to add to the Ramen and it usually goes perfectly well. For my Ramen, I wasn’t prepared to make Ramen 😛 So I have just topped it with whatever fresh ingredients I had at home. But I have provided alternatives to this and you can also feel free to add anything else. So go ahead and dive into this hot and healthy bowl of excitement.

The Building Blocks

For the broth

  • 300gms chicken thighs and wings (with bone)
  • 6-8 pods of Garlic (crushed)
  • 1 small onion (sliced or cubed)
  • 1 small carrot (round slices)
  • 1 star aniseed
  • 1 tsp coriander seeds
  • 1 tsp whole black pepper
  • 1/2 tsp fennel seeds
  • 2 tsp fish sauce
  • Salt as per taste

The Toppings

  • 1 medium sized white onion (Sliced)
  • 1 small carrot (sliced)
  • 1/2 cup sauteed Spinach (you can also use pok Choy)
  • 1 cup sauteed mushrooms (lightly salted)
  • 1/2 cup chopped spring onion greens
  • 1/2 cup chopped purple cabbage
  • 1 semi hard boiled egg
  • 2 slices pork ham
  • 2 pork sausages
  • Sesame seeds to garnish

The Ramen Noodles

  • 1 packet Shin Ramyun Noodle Soup

Putting it all Together

  • Wash the chicken and add it in a stew pot.
  • Add 3 cups water and all the other ingredients under ‘Broth’.
  • Bring it to a boil and let it simmer on a low flame for 30 mins.
  • Meanwhile, prepare the ramen noodles.
  • Bring 1 cup water to boil, to that add the spice powders from the ramen packet. Mix it well. Once boiled, add the noodles and let it boil for not more than 3 mins.
  • Remove the noodles and gravy in a serving bowl and keep aside.
  • Meanwhile, use a strainer and strain the chicken broth into a big container. Take out the chicken pieces from the strainer and using a fork, shred the chicken flesh off the bone. Keep aside. Throw away the rest of the spices and stew ingredients.
  • Pour 2 ladles of this chicken broth into the ramen serving bowl with the noodles.
  • Now, add the shredded chicken to this bowl.
  • Next, garnish the ramen with all the ‘Topping’ ingredients.
  • Slice a boiled egg in half and place it on top once all the topping is done.
  • Enjoy and slurp away at the hot ramen.
