Coffee and Rum Whole Roast Chicken

Yeah you read that right, incase you were double checking.. Coffee!! and Rum!! in Chicken??!! oh yesss.. thats definitely a knock you right off your butt recipe there. You’ll be surprised how well the coffee and rum come together to give this beautiful flavor to the chicken which is evenly balanced with some fresh orange juice, pepper and fresh herbs.

One of the easiest roast chicken dishes you can cook right there with the basic home ingredients. The chicken just sits in a delicious, lip smacking pool of coffee, rum, herbs and Orange juice, slowly soaking up that flavor as it marinates and bathes itself to glory.

Remember to NOT throw away the marination juices as that will be constantly used to brush on the chicken as it cooks. Also you can go bonkers with your choice of veggies to bake along with the chicken. I have added an assortment below but the choice is yours. You can even enjoy this with mashed potatoes.

You’ll need an oven to bake this in, I would not advise a tandoor as it will not cook evenly. 40-50 mins at 200°C is ideal cooking item. Make sure you have a sharp and big knife to carve through the chicken once it is cooked. Enjoyy!

The Building Blocks:

  • 1 whole chicken (800gms) (cleaned and scored)
  • 1 single espresso shot (60ml)
  • 1 large serving of rum (60ml)
  • 1/2 cup fresh orange juice
  • 1 tbsp IndiHive Natural honey
  • 1 tsp black pepper powder
  • 2 sprigs fresh rosemary (finely chopped)
  • 1 tsp paprika powder
  • 1 tbsp garlic paste
  • Salt as per taste

Assorted Veggies (Roughly chopped)

  • Carrots
  • Potato
  • Peas
  • Broccoli
  • Mushrooms

Putting it all together:

  • Mix all the marination ingredients in a big bowl (Big enough for the whole chicken to fit in). Whisk it well.
  • Place the scored chicken in this bowl and baste it with the juices and spice mix.
  • Let it marinate for 6 hours, chicken breast side down for 4 hours and then 2 hours on the back side. (if the pan is shallow and the marination juice doesn’t cover the entire chicken)
  • Once marination is complete, Preheat the oven at 200°C.
  • Place the chicken in a baking bowl and surround it with the veggies. (DO NOT throw away the marination juice).
  • Using a brush, generously brush the marination spice juices on the chicken. Save the rest of the marination to keep brushing the chicken as it cooks.
  • Set the oven timer for 40 mins and let it cook at 200°C.
  • After 20 mins in the oven, use the same brush and generously cover the chicken with the leftover marination juices.
  • Let it bake completely.
  • Remove from the oven, brush again with the marination if you want and then enjoy it hot.
